Preheat oven to 350°F. Grease a 9-inch springform cake pan and set aside.
In a large mixing bowl, whisk together flour, sugar, baking powder, spices, and salt.
In a separate medium bowl, whisk together eggs, milk, vinegar, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients, folding together with a spatula until just combined.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Arrange the apple slices on top of the batter, slightly overlapping the slice before.
Sprinkle brown sugar and cinnamon mixture on top of the apples.
Bake for 45-50 minutes, until a toothpick comes out almost clean.
Remove from oven and let cool for at least 10-15 minutes before releasing from the cake pan and slicing.
Drizzle with salted maple glaze and serve warm with a scoop of vanilla ice cream.
