    32 Easy Summer Dessert Recipes

    The summer season calls for ice cream, refreshing drinks, no-bake desserts, and recipes making use of all the fresh fruits that are in season. These are all the best easy summer dessert recipes that I crave all summer long.

    Most of these recipes are no-bake and set in the fridge or freezer. They're also easy to make with some requiring only a few ingredients. When the days are hot and all you want to do is spend as little time in the kitchen as possible but still want to make a sweet homemade treat, these are the recipes for you.

    1: Oreo Ice Cream Sandwiches

    These oreo ice cream sandwiches will cool you right down in the summer heat. This recipe went viral on Tiktok and Instagram when I posted it in 2023 (and continues to be my most popular recipe) and I can see why! They're so easy to make with only 5 ingredients and sets perfectly in the fridge overnight. That's it!

    2: Ube Ice Cream

    No-churn ice cream is the best thing to make in the summer when you don't feel like doing too much. You only need 3 ingredients to make this ube ice cream that's full of tropical coconut and vanilla-like ube flavour. No ice cream maker needed!

    3: Mango Tiramisu

    This mashup between naturally no-bake tiramisu and fresh juicy mangoes makes this dessert a hit for the summer. Everything from the mango juice-soaked ladyfingers to the dreamy mascarpone cream is so delicious.

    4: Mini Biscoff Cheesecakes

    No-bake cheesecakes are always perfect for the summer. These mini biscoff cheesecakes have everything a biscoff lover would want in a dessert - crunchy biscoff crust, creamy biscoff spread drizzle, and more biscoff on top to finish it off - now in a personal-sized, no-bake version.

    5: Matcha Ice Cream

    Another no-churn ice cream recipe that is a staple in my kitchen. This matcha ice cream is creamy, scoops like regular ice cream, and is packed full of matcha green tea flavour.

    6: Strawberry Charlotte Cake

    Despite how fancy they look and sound, charlotte cakes are no-bake desserts! This strawberry charlotte cake has layers of ladyfingers, strawberry mousse, and fresh strawberries. It's the cake to make when you want something elegant yet easy without turning on your oven.

    7: Mango Sago

    Mango sago pudding is a classic hot weather-approved dessert that's refreshing and easy to make. It's a satisfying combination of barely-there tapioca pearls, ripe and juicy mangoes, coconut milk, and any other add-ins you want like coconut jellies, fresh fruits, or ice on those heat wave days.

    8: No-Bake S'mores Tart

    The iconic campfire treat turned into a tart. This s'mores tart is made with a simple graham cracker crust, chocolate ganache, and piles of toasted meringue on top to encapsulate that campfire feeling. Best of all - it's no-bake!

    9: Thai Milk Tea Boba

    You're on vacation in Thailand. You've been walking around all day, determined to see all the sights even though it feels like you're being cooked in a humid oven. You stop by a market stand for a refreshing, ice-cold thai milk tea and suddenly you're rejuvenated and ready for anything. That's exactly what this drink feels like and now you can make it at home. There's simply nothing more refreshing and delicious on a hot day!

    10: Biscoff Ice Cream Sandwiches

    Another homemade ice cream sandwich recipe that's easy to make and a must-have in your freezer this summer. This one's made with biscoff cookies for the "crust" and creamy, no-churn, biscoff-flavoured ice cream in the middle.

    11: Strawberry Custard Tart

    Who doesn't love a good fruit tart in the summer? This one's made with an easy shortcrust tart shell filled with homemade custard and topped with whipped cream and strawberries. Swap out the strawberries for any fresh fruits you like for a completely different spin on this dessert.

    12: Limoncello Tiramisu

    This limoncello tiramisu is a boozy ray of sunshine that just feels like summer in a dessert. Tiramisu is naturally no-bake (you'll just need a stovetop) and easy to serve a crowd for those summer get-togethers.

    13: Mango Matcha Latte

    Add a fruity and tropical twist to your favourite matcha latte. This mango matcha latte features a layer of mango puree that looks amazing and tastes like summer when mixed together.

    14: Honeydew Sago

    Make your favourite sago pudding with honeydew for a unique and super refreshing no-bake dessert. Honeydews are honestly underrated and so juicy when ripe. They add an amazing flavour when combined with coconut milk and tapioca pearls in this classic Cantonese dessert.

    15: Biscoff Banana Pudding

    This is another popular dessert recipe that everyone on my social media has been loving this summer because it's so easy to make and delicious. By replacing nilla wafers with biscoff cookies in this banana pudding, you get a flavourful twist that's so satisfying especially if you love biscoff. Did I mention it's a no-bake dessert?

    16: Avocado Boba

    Don't knock it until you've tried it. Avocado drinks and desserts are popular in Southeast Asia for good reason. Avocados are surprisingly refreshing and don't feel too heavy as a dessert (it's a fruit after all!) when sweetened and combined with milk and ice.

    17: Mango Charlotte Cake

    Charlotte cakes are truly magical in the way they look so beautiful while being easier to make than you would expect. This one's made with mango mousse, ladyfingers, whipped cream, and fresh mangoes for a tropical, summery twist.

    18: Strawberry Matcha Boba

    Adding strawberries to your favourite iced matcha latte is a fun and fruity way to change it up. It's just as refreshing and the chewy tapioca pearls are so satisfying.

    19: Biscoff Tiramisu

    Tiramisu is one of my favourite no-bake desserts because it's so incredibly creamy and elevated. Swap the ladyfingers for biscoff cookies and you get this delicious spiced version of tiramisu that you'll love (maybe even more!).

    20: Mango Tart (with biscoff crust)

    This mango tart just screams summer with its easy crunchy cookie crust, creamy mango-lime filling, and whipped cream and fresh mangoes on top. The filling in this one does need to be baked but the tart sets in the fridge and is best served chilled.

    21: No-Churn Coffee Ice Cream with Chocolate Chunks

    This no-churn coffee ice cream takes everything you love about coffee and turns it into a delicious frozen treat (with optional chocolate chunks for good measure!). As with all no-churn ice cream, it's simple to make and perfect for a hot day.

    22: No-Bake Matcha Cheesecake with Oreo Crust

    These cute mini matcha cheesecakes are perfectly creamy, light, and airy with a crunchy oreo cookie crust. They can be enjoyed chilled or partially frozen, making them perfect for summer get-togethers or warm days.

    23: Banana Pudding Jars

    Banana pudding is one of the best hot weather no-bake desserts to make because they're so easy and fuss-free. Making them in individual mason jars is a great way to give them as gifts or make it easy to grab and go from the fridge whenever you need a sweet treat.

    24: No-Bake Millionaire's Shortbread Bars

    The millionaire's shortbread bars are a no-bake version of the classic baked bars. They're made with rich and decadent layers of no-bake shortbread, chewy caramel, and chocolate ganache with a sprinkle of flaky salt on top.

    25: Mango Pudding (Hong Kong Style)

    This is the classic mango pudding you can get at Chinese restaurants. It's creamy and light with a satisfying mango and milky evaporated milk flavour. They set up in the fridge for whenever you need a dessert that's not to sweet.

    26: Strawberry Jelly Cheesecake

    This strawberry jelly cheesecake combines class no-bake cheesecake with a refreshing layer of jelly and fresh strawberries on top. It's a texture combination that's super satisfying but still light and fruity.

    27: Mango Melona Soju Cocktail

    The only thing better than a popsicle is a refreshing cocktail to go with it. This cocktail combines a mango melona ice cream bar with any fruity soju you like. It's a super fun drink that tastes good to!

    28: Chocolate Chip S’mores Cookies

    These s'mores cookies take everything you love about s'mores and put them into a cookie. They're chewy cookies made with crushed graham crackers, chocolate chunks and gooey marshmallows.

    29: Matcha Tiramisu

    This is a delicious matcha green tea twist on a classic tiramisu. The matcha mascarpone cream is so dreamy you'll be craving this no-bake dessert again and again.

    30: Honeydew Bubble Tea

    This is a refreshing combination of juicy honeydew, coconut milk, and chewy tapioca pearls is the fruity boba drink that you're looking for this summer. Swap out the honeydew for your favourite fruit to customize this drink!

    31: White Rabbit Ice Cream

    This no-churn white rabbit ice cream takes a nostalgic milky Chinese candy and combines it with an easy-to-make ice cream. It's sweet and simple, as all things should be.

    32: Peach Cobbler

    Late summer also means stone fruit season which makes it the perfect time to make peach cobbler. This cozy dessert feature juicy fresh peaches under a soft and cake-like topping. Don't forget to serve it with vanilla ice cream for one of the best easy summer desserts you can make.
